Seasonal eating is not just a trend; it’s a lifestyle choice that promotes sustainability and health. By using fresh, local ingredients, we not only support our farmers but also ensure that our meals are packed with nutrients. This Roasted Acorn Squash recipe reflects that philosophy, showcasing the flavors of winter while giving a nod to summer’s bounty.

Consider pairing this dish with a simple side salad or some crusty bread to round out your meal. The balance of textures and flavors will elevate your dining experience, making it memorable for all who partake.

Adapted from Blue Bell Farm’s original recipe by David Asmussen and Meredith Eilers, this recipe celebrates the rewards of seasonal eating, with a nod to the flavors of summer preserved in your pantry or freezer. Special thanks to Blue Bell Farm, whose efforts and creativity inspire this dish.

In addition, you can customize the filling based on personal preferences or dietary needs. For a vegan alternative, simply skip the ground pork and incorporate additional veggies like sautéed mushrooms or bell peppers for added flavor and texture.

Gathering the right ingredients is crucial to achieving the best flavors. Opt for organic produce when possible, as this will enhance the overall taste and provide a healthier option.

Experimenting with spices can also create a unique twist on the classic recipe. Adding a pinch of cayenne pepper or a dash of cumin can introduce exciting new dimensions to the dish.

Serves 4

Ingredients for Roasted Acorn Squash

For the squash and filling:

  • 2–4 small acorn squash (Honey Bear variety is ideal)
  • Olive oil
  • 2 cups dry black beans (Black Turtle beans work wonderfully)
  • 1 pound ground pork (optional, for a vegetarian option, skip the pork)
  • 1 ½ teaspoons chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon crushed toasted fennel seed
  • ½ teaspoon crushed coriander
  • 1 teaspoon salt

For the salsa verde:

  • 1 pound tomatillos
  • 1 garlic head
  • 1 paste tomato (or 1 cup of canned tomato puree)
  • 1 white onion
  • 1 green pepper
  • 1 jalapeño, finely diced
  • 2⁄3 cup chopped cilantro
  • Dash of apple cider vinegar
  • ½ teaspoon chili powder
  • 1 teaspoon salt

Instructions

Step 1: Roast the Squash

Preheat the oven to 375°F. Cut the squash in half and scoop out the seeds. (Save the seeds to roast for a mountain-style snack!) Place the squash cut-side down on a roasting pan, drizzle with olive oil, and add a splash of water to the pan. Roast for 45 minutes, or until a fork easily pierces through the skin.

Step 2: Prepare the Black Beans

If you’re using a pressure cooker, rinse the beans and cook them on high pressure for 8 minutes, allowing the pressure to release naturally. Otherwise, if pre-soaked, simmer them on the stovetop for about 45 minutes or until tender. Black Turtle beans hold their shape nicely and offer a robust flavor.

Step 3: Cook the Pork (Optional)

If including ground pork, sear it in a pan with chili powder, smoked paprika, fennel seed, coriander, and salt. Let it develop some crispy edges for added texture. If you’re skipping the pork, add these seasonings directly to the beans and fry briefly for a flavor boost.

Step 4: Make the Salsa Verde

Peel the husks off the tomatillos and garlic. Broil them on a cookie sheet until charred, flipping once to ensure even toasting. Blend the tomatillos, garlic, tomato, onion, green pepper, jalapeño, and cilantro in a food processor. Add a splash of apple cider vinegar and season with chili powder and salt to taste.

Step 5: Assemble and Serve

Flip the roasted squash halves cut-side up. Fill each squash “bowl” with the black beans and top with ground pork (if using) and a generous helping of salsa verde. Serve immediately and enjoy the sweet, smoky, and tangy flavors that make this dish a comforting winter favorite.

Pairing this dish with a glass of white wine, such as Sauvignon Blanc, complements the flavors beautifully, enhancing the overall dining experience.

As you blend the salsa verde, don’t hesitate to taste as you go. Adjusting the ingredients to your preferences ensures that the final product is just right for you and your guests.

For an extra touch, garnish the dish with crumbled queso fresco or avocado slices before serving. This not only enhances the visual appeal but adds creamy richness that balances the dish’s flavors.

Lastly, don’t forget that leftovers can be repurposed into delicious quesadillas or grain bowls the next day, making this dish not only satisfying but also versatile.
